Ready For Red?

Okay, so anyone I talk to back on the mainland makes fun of me and teases me when they go to Target. But we will FINALLY have not one, but 2 Target stores here on the island! And I'm SUPER EXCITED! I've missed that big box store! Wal-mart and K-mart just doesn't cut it. The Target being built in Kapolei Commons is a brand spanking new shopping center. It is a bit far from us, but I want to check out the other stores. They are also putting in the FIRST Petco for Oahu as well! Check out Kapolei Commons HERE and Target HERE. When we make our annual trip to the mainland, Target is ALWAYS a MUST on our list! LOL Now, I don't have to long for that anymore! Q will be gone when they open. (He leaves March 3rd and the stores open March 8th.) Guess I have to battle the traffic myself! He's sooo much better with all that!

On another note, my surgery finally has a "confirmed" date. I'm still thinking that they will change it only because it was changed 3 times and then stalled until next month! LOL No worries, I'd gladly wait until Dr. Lucidii is there. He is the head surgeon and told me personally that he wanted to be there. He is the best at what he does, so another month, no worries. Dr. Pickenpaw was worried to keep calling and changing the dates and said she hoped I wouldn't be angry. Which I wasn't because I'm a little nervous. Even though it's an outpatient procedure, I've NEVER had any kind of surgery whatsoever. I know it's just an exploratory surgery and they are reassuring me how "simple" it is, but my nerves still get to me. Needless to say, Dr. Pickenpaw will not be doing the surgery w/ Dr. Lucidii, they are on a monthly rotation and Dr. Levy will be assisting Dr. Lucidii. I have never met Dr. Levy, but I talked to him on the phone, and will meet him a week before the procedure. He even gave me his personal line, which I thought was awesome! (You don't usually get that w/ Army hospitals. They usually give you the run around). They could've done it towards the beginning of the month, but I told them Q will be TDY and so they scheduled a time to work for us. Q will be getting back a couple days before I have it, but at least he'll be here!

Tasty Tuesdays!

Aloha! So here I am w/ a new recipe! I talked to my brother Josh to see what I should post for today's recipe. Even thought this isn't one he suggested, I thought of him when I decided which one to use. He made something similar to this when he was visiting for holiday. So here it is, Finadene (Fin-a-den-knee). Finadene (also fina dene) is a salty, spicy, sour all-purpose condiment used in Chamorro cuisine. It is comprised of soy sauce, vinegar or lemon juice, chopped white onion, and fresh chilies. Adding oil and/or water to finadene makes it suitable as an all-purpose marinade. Also a different type of finadene is lemon finadene which substitutes the soy sauce with lemon juice and thus substituting lemon juice for vinegar. This was always at the table at my mother-in-law's in Guam. They like it HOT! So needless to say, I never tried it. Q's FIRST digi LO!

Aloha! How was everyone's weekend? No bad luck on Friday, the 13th I hope! We just chilled. Had Tranq's Gymboree classes and another Birthday party. But the BEST part was when Q came and had a mani/pedi with me! Now that's love! LOL He was freaking out during his pedicure because he does NOT like anyone touching his feet. And when his nail tech brought out the paraffin wax, I thought he was gonna die! LMBO! But he did it for me, I think because I guilt tripped him because he will be gone for our 5 year anniversary next month! Anyways, I have something special to show you all! Q made his very first LO! (Don't know if it'll be the last, but it turned out pretty good!) So here it is:
